Instead of thyme-mustard-Worcestershire, I'd probably start with a bit of soy sauce and curry, and go on from there.
Omit Worchestershire? Are you mad woman? It is the elixir of the gods and should be used in everything from pasties (Cornish, English, or god forbid Welsh) to soda. Someday soon, I promise you, the hegemony of Coca-cola wuill be replaced by the hegemony that is Worchestershire cola!
